What is a pasta salad made of?

The Salad:

1  lb. Box Thin Spaghetti

1 Tbsp. Kosher Salt

2  Tbsp. Olive Oil

2  Cucumbers (diced)

1  10oz. Package Cherry or Grape Tomatoes (sliced in half)

1  Small Red Onion (finely diced)

1  4oz. Can Sliced Black Olives (drained)

1  Red Bell Pepper (diced)

1  5oz. Bag Pepperoni Minis

½ Cup Grated Parmesan Cheese 

 

Homemade Italian Salad Dressing:

      1 Tsp. Black Pepper

2  Tbsp. Italian Seasoning

1  Tbsp. Sugar

1  Tsp. Kosher Salt

1  Tsp. Minced Garlic

½ Cup Red Wine Vinegar

1  Cup Virgin Olive Oil

How to make Italian Spaghetti Pasta Salad

Fill a large stock pot with water and bring to a boil on medium heat.  Then add 1 tbsp. kosher salt and the spaghetti, and cook according to package directions, or until tender.  Drain the spaghetti and transfer into a large bowl, then gently stir in 2 tbsp. olive oil to coat the spaghetti.  Place the spaghetti in the refrigerator to chill for about 1 hour.

Once the spaghetti is chilled, add cucumbers, cherry tomatoes, red onions, black olives, red bell peppers, the pepperoni minis, and toss together well.

In a pint mason jar with a lid, add all the salad dressing ingredients together and shake well.  Pour over spaghetti salad and toss to coat.

 

Chill in the refrigeration for about 4 hours, or overnight.

Serve with a sprinkle of parmesan cheese and a pinch of black pepper!
