Beer Batter Onion Rings at home

  • Sweet Onions
  • 2 cups All-Purpose Flour
  • 1/4 cup Corn Starch
  • 1 Tsp. Paprika
  • 2 Tsp. Salt
  • 1/2 Tsp. Baking Powder
  • 1/2 Tsp White Pepper
  • 1 cup Cold Beer
  • Vegetable Oil

Instructions

  1. Peel the onions, then cut off the ends and slice them about ⅜ inch thick.
  2. Punch out the rings and soak the sliced onion rings in ice cold water with some ice cubes and 1 tsp. of salt for 20 to 30 minutes. Then in a shallow bowl, add 1 cup all-purpose flour and dredge the onion rings in the flour.  Place them on a rack and let set for about  30 minutes so the flour will stick to the onion rings.
  3. Now make a batter!  In a bowl, add 1 cup all-purpose flour, corn starch, paprika, 1 tsp. salt, baking powder, white pepper and mix together.  Slowly add very cold beer until you get a batter like pancake batter, maybe a little thinner.
  4. In a deep fry pan, add vegetable oil (about 1½ inch deep) and heat it to 350 degrees.  Then take each flour coated onion ring (using a chopstick, wooden skewer or fork) and dip it into the batter.  Let soak in the batter until the batter sticks to the flour already on the onion rings.  Drop them in the oil and cook until nice and golden brown. Remove and place them on a bed of paper towels. Hit them with a light dusting of salt as soon as they come out of the oil. Let them rest for a minute or two and serve hot!
