Breakfast Quesadilla

If you are looking for a simple breakfast to take on the go, then you will love this breakfast quesadilla. It’s stuffed with eggs, onions, peppers, bacon, tomato and three types of cheese. It’s sure to be a new favorite!

Ingredients

  • 1 Tbsp. Oil
  • 2 Tbsp. Butter
  • 1/2 cup Onion
  • 1/2 Red & Green Bell Peppers (diced)
  • 13 Eggs (whisked)
  • 1/2 Tsp. Salt
  • 1/2 Tsp. Pepper
  • 1 Flour Tortilla
  • 1/2 cup Mexican Blend Cheese (shredded)
  • Tomato (sliced)
  • Cooked Bacon
  • 1/2 cup Sharp Cheddar Cheese (shredded)

Instructions

  1. In a skillet on medium heat, add olive oil and butter. Once butter is melted, add onion and bell pepper and sauté until tender.
  2. In a bowl, whisk eggs, salt, and pepper, and pour into the skillet over the peppers and onion. Cook and scramble the eggs, then remove from the pan and set aside.
  3. In the same pan, add the tortilla. Flip to coat both sides with the remaining oil in the skillet. Let it cook for about a minute per side. Then take the egg mixture and place it on half of the tortilla. Add cheese, sliced tomato, bacon, and more cheese. Flip the other half of the tortilla over the egg side, and let the cheese melt. Then flip it over and cook until the other side is golden brown.
  4. Remove from heat, place on a plate, then cut with a knife or Pizza cutter. Serve with sour cream, green onions, and avocado.
