Corn Dog Casserole

There is nothing better than a corn dog anytime. Try this delicious recipe for Corn Dog Casserole with Chili. It’s going to be a new favorite in your home!

Ingredients

  • 1 lb. Lean Ground Beef
  • Non Stick Cooking Spray
  • 1 Medium Diced Sweet Onion
  • 1 Tsp. Garlic Powder
  • 1 Tsp. Onion Powder
  • 1/2 Tsp. Salt
  • 1/2 Tsp. Pepper
  • 1/4 Tsp. Red Pepper Flakes (optional)
  • 1 Tsp. Chili Powder
  • 2 Cans Rotel Tomato and Green Chilies
  • 1 Can Mixed Chili Beans in Chili Sauce
  • 1 Can Kidney Beans in Chili Sauce
  • 2 Boxes Jiffy Corn Muffin Mix
  • 2 Eggs
  • 2/3 cup Milk
  • 5 Hot Dogs

  • 1 1/2 cups Shredded Cheese
  • Sour Cream (optional)

Instructions

  1. Preheat oven to 350 degrees.
  2. In a skillet on medium heat, add lean ground beef, onion, and seasoning. Cook until brown. Then add cans of Rotel and chili beans and let simmer for about 5 to 10 minutes.
  3. In a medium bowl, add Jiffy corn muffin mix, eggs, and milk. Mix until combined and set aside.
  4. Grease a 9 x 12 baking dish. Pour the chili mixture into the baking dish and place the hot dogs evenly across the top of the chili. Spoon corn muffin mixture over hot dogs evenly.
  5. Place it in the oven and bake for 25 minutes, or until golden brown and a toothpick inserted in the corn muffin comes out clean. Sprinkle shredded cheese on top, turn the oven off, and let it sit in the oven until the cheese is melted.
  6. Remove from the oven and serve with sour cream, shredded cheese, and any other favorite toppings you like and enjoy!
