Flat Iron Steak Fajitas

Flat Iron Steak Fajitas on red plate

How to make Flat Iron Steak Fajitas that melt in your mouth. These are the most tender steak fajitas you will ever taste! So flavorful and juicy you will want seconds!

Ingredients

Scale
  • 1 Flat Iron Steak
  • 3 Tbsp. Olive Oil (divided)
  • 1 Tbsp. Lime Juice
  • 3 Tbsp. Butter
  • 3 Bell Peppers (Green, Red, and Yellow – thinly sliced)
  • 1 Sweet Onion (thinly sliced)

Seasoning:

  • 1 Tsp. Onion Powder
  • 1 Tsp. Brown Sugar
  • 1 Tsp. Cumin
  • 1 Tsp. Chili Powder
  • 1 Tsp. Garlic Powder
  • 1 Tsp. Salt
  • 1 Tsp. Pepper

Toppings and Sides:

  • Tortillas
  • Cilantro, Lettuce, Shredded Cheese, Guacamole, Sour Cream, Pico de Gallo, or Salsa.

Instructions

  1. Allow the Flat Iron Steak to come to room temp. If you buy a full-length flat iron steak, cut it in half. Mix olive oil and lime juice together and rub it on both sides of the steaks. In a small bowl, mix all the seasonings together, then rub the seasoning mixture on both sides of the steaks (reserve some of the seasoning mixture for the veggies).
  2. In a cast iron skillet, add a thin layer of olive oil (about 1 Tsp.), rub it into the skillet, and bring it to high heat. Add steaks and cook them for 1 minute on each side. Reduce heat to medium and turn the steaks every minute, a total of 10 to 12 times to reach medium rare, or several more times to reach medium. Then add butter into the skillet. Once the butter has melted, baste both sides of the steak with butter the last few times you turn them. Put steaks on a dish, cover loosely with aluminum foil, and let rest for 10 to 15 minutes while you prepare the veggies. 
  3. In the same cast iron skillet on medium heat, add onions and peppers into the meat drippings. Then drizzle 2 Tbsp. of olive oil over the veggies and season with half of the remaining seasoning mix. Cook them until they are tender (but not over cooked) and a little charred on the edges. 
  4. Uncover the steaks, then thinly slice them across the grain.  Add the steak slices into the skillet, mix them with the onions and peppers, and sprinkle with the remaining seasoning mixture. Remove from heat, then serve with warm tortillas and your favorite toppings and sides.
