King Ranch Chicken Casserole Recipe

  • 4 Tbsp. Butter
  • 1/2 cup Green Bell Pepper (diced)
  • 1/2 cup Red Bell Pepper (diced)
  • 1 cup Sweet Onion (diced)
  • 1 Tbsp. Minced Garlic
  • 2 cups Cooked Chicken (shredded or cubed)
  • 1 Tsp. Onion Powder
  • 1 Tsp. Cumin
  • 1 Tsp. Garlic Powder
  • 1 10.5oz. Can Cream of Mushroom Soup
  • 1 10.5oz. Can Cream of Chicken Soup
  • 1 Can Diced Tomatoes and Green Chilies (drained)
  • 1 Can Chopped Green Chiles
  • 2 cups Sharp Cheddar Cheese (shredded, divided)
  • 2 1/2 cups Mexican Blend Cheese (shredded, divided)
  • 16 Corn Tortillas (cut into quarters)
  • Nonstick Cooking Spray
  • Sour Cream

Instructions

  1. Preheat oven to 350 degrees.
  2. Prepare the corn tortillas by cutting them into quarters or strips. You can use white or yellow corn tortillas. If you prefer, you can also use flour tortillas.
  3. In a skillet on medium heat, melt butter, then add onion and bell pepper and cook until tender. Add minced garlic and cook for about 1 minute until fragrant.
  4. Then add Chicken, seasonings, soups, diced tomatoes and green chilies, and the can of green chiles. Mix until combined. Stir in ½ cup of each cheese until the cheese is melted, then remove from heat.
  5. In a pre-greased 9×13 baking dish, add a layer of tortillas. Then spoon ½ of the chicken mixture and spread evenly over the tortillas. Sprinkle with both types of shredded cheese evenly. Repeat the previous steps, then add a final of layer of tortillas and top with the remaining shredded cheese.
  6. Bake in the oven uncovered for 30 minutes until tortillas get a little crispy and the cheese is melted. Let it sit for about 10 minutes. Then serve, top with sour cream and enjoy!
