Slow Cooker Creamy Lemon Chicken

If you love Crockpot recipes, you are going to love this slow cooker creamy lemon chicken. Tender juicy chicken in a creamy lemon butter garlic sauce.

Ingredients

  • 4 Chicken Breasts (skinless/boneless)
  • 1 Stick Butter (divided)
  • 1/2 Tsp. Salt
  • 1/2 Tsp. Black Pepper
  • 1 Tsp. Italian Seasoning
  • 1/2 cup Chicken Broth
  • 4 Tbsp. Lemon Juice
  • 1 Tsp. Granulated Chicken Bouillon
  • 3 Tsp. Parsley (divided)
  • 2 Tbsp. Garlic (minced)
  • 1 cup Half and Half
  • 1 Tbsp. Cornstarch
  • 1/2 cup Grated Parmesan Cheese
  • Garnish with Parsley and Fresh Lemon Slices

Instructions

  1. In a large skillet on medium-high heat, add 4 tablespoons of butter. Once the butter has melted, place chicken breasts in the skillet. Season the Chicken both sides of the breast with salt, pepper, and Italian seasoning.  Sear the chicken breast on each side for about 3-4 minutes per side until golden brown, but not fully cooked. 
  2. Pre-grease or line the crockpot, then place the chicken in the bottom then add minced garlic on top of each piece of chicken.
  3. In a small bowl combine, chicken broth, lemon juice and granulated chicken bouillon and pour it into the crockpot with your chicken. Add the remaining pats of butter on top of the chicken and sprinkle with parsley.  Cook on low for about 3 hours. 
  4. In a large measuring cup, add the half and half and cornstarch and whisk together well. Pour the mixture into the crock pot with Chicken and cook for 30 minutes. Then add grated parmesan cheese and cook for another 15-30 minutes.
  5. Serve with rice or your favorite side, and garnish with parsley and fresh lemon slices. Enjoy!
