Santa Fe Beef Stew in Dutch Oven

Ingredients

  • 2 lbs. Lean Ground Beef
  • 1 Tbsp. Olive Oil
  • 1 cup Sweet Onion (diced)
  • 1 Packet Ranch Dressing Seasoning
  • 1 Packet Taco Seasoning
  • 1 Green Bell Pepper (diced)
  • 1 Tsp. Garlic (minced)
  • 2 Can Rotel Diced Tomatoes and Green Chilies
  • 1 4oz. Can Green Chilies (diced)
  • 1 Can Sweet Yellow or White Corn (drained)
  • 1 Can Pinto Beans (drained)
  • 1 Can Black Beans (drained)

Toppings:

  • Shredded Cheddar Jack Cheese
  • Sour Cram

Instructions

  1. In a Dutch oven or stock pot over medium heat, add olive oil, lean ground beef onion, ranch season, and taco seasoning. Mix it together, cover, and cook until brown and no longer pink.
  2. Then uncover, and add bell pepper and garlic. Mix, cover and cook for another 3 to 5 minutes until bell pepper has softened.
  3. Then add Rotel tomatoes and green chilies, corn, green chilies, pinto beans, and black beans. Mix, cover and let it simmer on low for about 15 minutes.
  4. Top with cheddar jack cheese, and sour cream, and serve with warm rolls, Indian fry bread or cornbread.
