Quick and Tasty Sausage Tater Tot Breakfast Casserole

Ingredients

  • 1 lb. Breakfast Sausage
  • 8 eggs
  • 1/2 cup Onions (diced, optional)
  • 1 1/2 cups Heavy Cream or Whole Milk
  • 1 Large Package Frozen Tater Tots (divided)
  • 2 cups Shredded Cheddar Cheese
  • 1/2 Tsp. Salt
  • 1 Tsp. Pepper
  • 1 Tsp. Garlic Powder

Instructions

  1. Preheat oven to 375 degrees.
  2. In a skillet on medium heat, cook the breakfast sausage. If you are adding onions, cook them with the sausage. Drain the excess grease and set it aside.
  3. In a medium mixing bowl, whisk together eggs, heavy cream (or whole milk) and all the seasonings and set it aside.
  4. In a pre-greased 9 x 13 baking dish, add half of the tater tots to form a layer on the bottom of the baking dish. Then spoon the cooked sausage over the top of the tater tots.
  5. Add the shredded cheddar cheese, and then pour the egg mixture evenly over the top. Place the remaining tater tots on the casserole for the final layer.
  6. Cover the casserole with foil (This helps the eggs to fully cook and tater tots not to burn) and bake for 40 minutes. Remove the foil, then bake for another 10 to 15 minutes (depending on your oven) until the tater tots are brown and crispy on top.
  7. Serve warm with your favorite toppings: sour cream, bacon, or even tomatoes, and enjoy!
