  • 1 Tsp. Garlic Powder
  • 1 Tsp. Paprika
  • 2 Cups Shredded Cheddar Jack Cheese Blend (divided)
  • 1/2 Cup Crispy Fried Onions

Instructions

  1. Preheat the oven to 375 degrees.
  2. In a saucepan on medium heat, add olive oil and 2 Tbsp. of butter. Once butter is melted, add diced onion and sauté until tender. Add 2 more Tbsp. of butter, then stir in the flour. Cook the flour for 1-2 minutes stirring continuously, then pour in the milk and continue to stir.
  3. Add salt, pepper, garlic powder, and paprika. Add 1 3/4 cups of shredded cheese and stir until the cheese has melted, then remove from heat.
  4. In a pre-greased deep 8×10 baking dish, place 1/3 of the sliced potatoes in the baking dish and add 1/3 of the cheese sauce, and spread evenly over the potatoes. Repeat this step two more times. Top with the remaining shredded cheese, and sprinkle some paprika.
  5. Cover and bake in the oven for 65 minutes, or until the potatoes are tender. Remove from the oven, and top with crispy fried onions. Let it bake uncovered for five more minutes. Then remove it from the oven and let it sit for about 10-15 minutes, then serve.
