Beef Fried Rice Skillet

Ingredients

  • 3 Tbsp. Sesame Oil (divided)
  • 1 lb. Lean Ground Beef (80/20)
  • 1 Tbsp. Worcestershire Sauce
  • 1 Tsp. Onion Powder
  • 1 Tsp. Garlic Powder
  • 1/2 Tsp. Salt
  • 1/4 Tsp. Black Pepper
  • 1/4 Tsp. Red Pepper Flakes
  • 1/2 cup Sweet Onion (diced)
  • 1/3 cup Red Bell Pepper (diced)
  • 2 Eggs (beaten)
  • 1 cup Frozen Peas and Carrots (thawed)
  • 2 cups White Rice (cooked, we used Minute Rice)
  • 3 Tbsp. Soy Sauce
  • 2 Tbsp. Green Onions (diced)

Instructions

  1. Prepare and cook two cups of white rice following package instructions and set it aside.
  2. In a skillet on medium heat, add 1 tablespoon of sesame oil and lean ground beef. Then season the meat with onion powder, garlic powder, red pepper flakes, salt, and pepper. Stir in Worcestershire sauce, onion, and bell pepper, cover, and let it cook for 4 to 5 minutes, or until the beef is no longer pink and the veggies are tender.
  3. Move the beef mixture to one side of the skillet then add in eggs and scramble them. Slide the scrambled eggs over and add in peas and carrots. Gently stir the scrambled eggs into the vegetables, then fold it into the beef mixture. Cover and let it cook for about 2 minutes.
  4. Stir in 2 more tablespoons of Sesame Oil and mix it into the beef mixture. Then add the cooked rice into a skillet with the beef, veggie, and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until warmed and combined then remove from the heat.
  5. Season with additional salt and pepper to taste. Garnish with diced green onions.
