Chorizo and Eggs with Tortillas

This chorizo and eggs breakfast skillet is perfect for busy mornings. It’s quick and easy to make with only 3 ingredients and it’s perfect for those days when you just don’t have time to cook a full breakfast. Wait until you taste the flavor, and it’s low carb and keto friendly!

Ingredients

  • 1 lb. Tube Chorizo (pork or beef)
  • 10 Eggs
  • 8 Flour Tortillas

Toppings (optional)

  • Shredded Cheese
  • Sour Cream

Instructions

  1. In a skillet on medium heat, add the Chorizo. Chop it up and cook until it starts to liquefy. Once it does, let it simmer on medium heat for about 10 minutes or until the sausage gets a little brown and is thoroughly cooked.
  2. In a separate bowl, whisk eggs and pour them into the sausage. Reduce the heat to medium-low and scramble the eggs, mixing them continuously into the sausage until it’s done.  Once the eggs are cooked to your liking, remove the skillet from the heat.
  3. Serve on warm tortillas, and enjoy!

Notes

The sausage has plenty of flavor, there is no need to add any additional seasoning.
