Ingredients

  • 1/2 cup All-purpose Flour
  • 1/2 Tsp. Salt
  • 1/2 Tsp. Pepper
  • 2 Eggs (well beaten)
  • 1 cup Italian Seasoned Breadcrumbs
  • 4 Tbsp. Parmesan Cheese Grated (divided)
  • 2 Tbsp. Olive Oil
  • 2 Large Chicken Breasts (Boneless, Skinless)
  • 2 Tbsp. Olive Oil
  • 2 Hoagie Rolls (sliced in half)
  • 3 Tbsp. Butter (softened)
  • 1 Tsp. Garlic Salt
  • 3/4 cup Marinara Sauce
  • 1/2 cup Mozzarella Cheese (shredded)
  • 4 Slices Provolone Cheese

Instructions

  1. Slice each chicken breast in half and set aside.
  2. You will need 3 separate large shallow bowls.  In bowl #1 add all-purpose flour and season it with salt and pepper, then in bowl #2 add well beaten eggs, and in bowl # 3 add Italian seasoned breadcrumbs with a couple of tablespoons of grated parmesan cheese mixed in.
  3. Take each chicken breast and dredge it in the flour, covering both sides, then dip in the egg wash, and then in the Italian seasoned breadcrumbs (coating each chicken breast on both sides).
  4. Place a large skillet on medium heat and add olive oil.  Once olive oil is hot, add the chicken breasts in and fry both sides until they are crispy and golden brown and the chicken is completely cooked, then set aside.
  5. Place the sliced Hoagie rolls onto a baking sheet. Spread butter on each piece and sprinkle with garlic salt and grated parmesan cheese. Place them in the broiler for 2-3 minutes until the butter is melted and they start to get crispy and brown on the edges.
  6. In a bowl, heat up Marinara sauce. Then spread a little sauce on each side of the buttered roll. Sprinkle each piece with a little grated parmesan cheese, then place the cooked chicken breast on one side. Add sliced provolone cheese, a little more sauce, some shredded mozzarella cheese, and place the other half of the roll on the top. Place the sandwich on a baking sheet into the broiler for 2 to three minutes until the cheese had melted and the top bun starts to crisp. Enjoy this delicious homemade Chicken Parm Sandwich!
