  • 6 to 8 Petite Gold Potatoes (sliced thin)
  • 2 cups Parmesan Cheese (shredded)
  • 1 Tsp. Salt (divided)
  • Non-stick Cooking Spray
  • 2 Tbsp. Olive Oil
  • 1 Tsp. Butter
  • 3 cups Fresh Spinach (chopped)
  • 1 Tbsp. Minced Garlic
  • 1 1/2 cups Ricotta Cheese
  • 4 oz. Cream Cheese (softened)
  • 2 Tbsp. Grated Parmesan Cheese (divided)
  • 1 lb. Lean Ground Beef
  • 1 Sweet Onion (diced)
  • 1 Can Mild Diced Tomatoes and Green Chilies (drained)
  • 1 Tsp. Italian Seasoning
  • 1 Tsp. Paprika
  • 1 Tsp. Garlic Salt
  • 1/2 Tsp. Pepper
  • 1 cup Mozzarella Cheese (shredded)
  • 1 cup Italian Blend Cheese (shredded)
  • 1 Tbsp. Parsley

Instructions

  1. Preheat oven to 350 degrees.
  2. In a pre-greased 9 x 13 baking dish, spread 1 cup of the shredded parmesan cheese across the bottom of the dish. Then place the thinly sliced potatoes evenly until the bottom is covered. Spread the remaining shredded parmesan cheese over the top of the potatoes, and sprinkle with salt. Place the baking dish uncovered into the oven for 30 minutes.
  3. While the potatoes are baking, in a skillet on medium heat add olive oil and butter. Then add 3 cups of chopped fresh spinach. Add in minced garlic and a ΒΌ tsp. of salt. Cook the spinach about 1 minute just until it wilts. Then remove it from the heat and set aside.
  4. In that same skillet, add lean ground beef, onion, and seasonings. Once the meat is cooked and no longer pink add a can of tomatoes and green chilies. Mix it into the meat, then remove it from the heat and set it aside.
  5. In a medium bowl, add softened cream cheese, and ricotta cheese and mix it together. Then fold in the cooked spinach and 1 Tbsp. of grated parmesan cheese.
  6. Remove the potatoes from the oven and let them cool for about 5 minutes. Then spread the ricotta spinach mixture evenly onto the potatoes. Add a layer of shredded Mozzarella cheese, then pour the meat mixture over it and spread evenly. Top with Italian blend shredded cheese.
  7. Place the baking dish back into the preheated oven and bake it at 350 degrees for 15 minutes.
  8. Remove from the oven, and top with the remaining grated parmesan cheese and some parsley and serve!
