7 Cheese Hamburger Potato Casserole

We are always looking for a cheesy recipe because we love cheese! This is it! This hamburger potato casserole has seven types of cheese and so much flavor in every bite! It’s a very easy recipe and great for a large family or gathering.

 

 

Step-by-step Instructions:

Start by preheating the oven to 350 degrees.

In a pre-greased 9 x 13 baking dish, spread 1 cup of the shredded parmesan cheese across the bottom of the baking dish. Then place the thinly sliced potatoes evenly until the bottom is covered. Spread the remaining shredded parmesan cheese over the potatoes, and sprinkle with salt. Place the baking dish uncovered into the oven for 30 minutes.

While the potatoes are baking, in a skillet on medium heat add olive oil and butter. Then add 3 cups of chopped fresh spinach. Add in minced garlic and a ¼ tsp. of salt. Cook the spinach about 1 minute just until it wilts. Then remove it from the heat and set aside.

In that same skillet, add lean ground beef, onion, and seasonings. Once the meat is cooked and no longer pink add a can of tomatoes and green chilies. Mix it into the meat, then remove from the heat and set it aside.

In a medium bowl, add softened cream cheese, ricotta cheese and mix it together. Then fold in the cooked spinach and 1 Tbsp. of grated parmesan cheese.

Remove the potatoes from the oven and let them cool for about 5 minutes. Then spread the ricotta spinach mixture evenly onto the potatoes. Add a layer of shredded Mozzarella cheese, then pour the meat mixture over it and spread evenly. Top with Italian blend shredded cheese.

Place the baking dish back into the preheated oven and bake it at 350 degrees for 15 minutes.

Remove from the oven, and top with the remaining grated parmesan cheese and some parsley and serve!
