Ingredients

Units Scale
  • 1 Refrigerated Pie Crust
  • 1/2 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1 Tsp. Lemon Juice
  • 1 Tsp. Onion Powder
  • 1 Tsp. Garlic Powder
  • 1 Tsp. Salt
  • 1/2 Tsp. Pepper
  • 1/2 Tsp. Paprika
  • 2 cups Cooked Chicken (shredded)
  • 3/4 cup Celery (finely chopped)
  • 1/4 cup Shaved Almonds
  • 1/2 cup Red Onion (diced)
  • 1/2 cup Bacon (cooked, diced)
  • 1 cup Sharp Cheddar Cheese (shredded, divided)
  • 1 cup Cheddar Sour Cream Ruffles Potato Chips (crumbled to bite size pieces)

Instructions

  1. Preheat oven to 375 degrees.
  2. In a large bowl, mix together chicken, seasonings, celery, onion, lemon juice, bacon, shaved almonds, mayonnaise, and sour cream. Fold in 2/3 cup shredded cheddar cheese and set it aside.
  3. Unroll one room-temperature pie crust and press it into the pie dish. If using a deep pie dish, you can use the other pie crust to add some additional dough to make fluted edges.
  4. Spoon the chicken mixture into the prepared pie dish, spreading evenly. Top with the remaining cheese, then crumbled potato chips. Place it in the oven and bake it for 40-45 minutes. If the pie crust and chips brown too quickly, loosely cover with aluminum foil for the remaining time.
  5. Remove from oven and let cool 10 to 15 minutes before serving this delicious Pie.
