Italian Sausage Tortellini Soup Recipe

Ingredients

  • 1 lb. Italian Sausage (ground)
  • 8 Slices Bacon (chopped, divided)
  • 1 Sweet Onion (chopped)
  • 2 Tbsp. Garlic (minced)
  • 4 cups Chicken Broth
  • 4 cups Water (divided)
  • 2 Tsp. Better than Bouillon Chicken Flavor
  • 1 14.5oz. Can Diced Tomatoes (undrained)
  • 1 9oz. Package Refrigerated Cheese Tortellini
  • 2 cups Fresh Baby Spinach (chopped)
  • 1 1/2 Tbsp. Italian Seasoning
  • 1/2 Tsp. Pepper
  • 1/2 Tsp. Crushed Red Pepper Flakes (optional)

Topping:

  • Shredded Italian Blend Cheese
  • Bacon
  • Dried Basil

Instructions

  1. In a Dutch oven on medium heat, cook the bacon, remove it with a slotted spoon leaving the drippings in the pot, and set it aside. Then add the sausage and onion to the bacon drippings. Cover and cook until the sausage is brown and the onions are soft.
  2. Add minced garlic and let it cook for about one minute. Then add diced tomatoes, 4 cups of chicken broth, 2 cups of water, chicken bouillon, and seasonings. Cover and bring it to a boil.
  3. Once it comes to a boil, add in cheese-stuffed tortellini, stir in fresh chopped spinach, and let the tortellini cook according to package instructions. Add the cooked bacon (reserve some for the topping) and 2 more cups of water, let it cook another couple of minutes, and serve. Top each serving with Italian blend cheese, bacon pieces and some dried basil and enjoy!
