Rustic Italian Sausage Tortellini Soup Recipe

If you are looking for a fabulous Italian sausage and tortellini soup recipe, then you found it! This easy Sausage Tortellini soup has so much flavor you will love it! It’s one of our favorites and is truly comfort in a bowl. You can make this tortellini soup with Italian sausage and kale, but we like to use fresh spinach. This is a simple tortellini soup to make. 

What you need to make this sausage and tortellini soup recipe:

1 Lb. Italian Sausage (ground)

8  Slices Bacon (chopped, divided)

1  Sweet Onion (chopped)

2  Tbsp. Garlic (minced)

4  Cups Chicken Broth

4  Cups Water (divided)

2  Tsp. Better than Bouillon Chicken Flavor

1  14.5oz. Can Diced Tomatoes (undrained)

1  9oz. Package Refrigerated Cheese Tortellini 

2  Cups Fresh Baby Spinach (chopped)

1 ½ Tbsp. Italian Seasoning

½  Tsp. Pepper

½  Tsp. Crushed Red Pepper Flakes (optional)

 

Toppings:

Shredded Italian Blend Cheese

Bacon

Dried Basil

How to make Sausage and Tortellini Soup

This recipe calls for ground Italian Sausage, but if you can’t find any, get your favorite sausage and use a sharp knife to cut the casings off. We used Johnsonville mild Italian sausage.

In a 6 quart Dutch oven on medium heat, cook the bacon, remove it with a slotted spoon leaving the drippings in the pot, and set it aside.

Then add the sausage and onion to the bacon drippings. Cover and cook until the sausage is brown, and onions are soft. 

Add minced garlic and let it cook for about one minute. Then add diced tomatoes, 4 cups of chicken broth, 2 cups of water, chicken bouillon, and seasonings. Cover and bring it to a boil.

Once it comes to a boil, add in cheese-stuffed tortellini, stir in fresh chopped spinach, and let the tortellini cook according to package instructions.

Add the cooked bacon (reserve some for the topping) and 2 more cups of water, and let it cook another couple of minutes and serve.
