Smoked Gouda Veggie Melts

If you’re looking for a quick and easy meal or something special to make for game day, or any occasion, these smoked gouda veggie melts on yummy toasted French bread are sure to please!

Ingredients

  • 1 Loaf French Bread (sliced)
  • 1 cup Mushrooms (diced)
  • 1 cup Red Bell Pepper (diced)
  • 1 cup Sweet Onion (diced)
  • 1 cup Broccoli Florets (diced)
  • 2 Tbsp. Olive Oil
  • Sea Salt
  • 1/2 cup Mayonnaise
  • 1 Tsp. Minced Garlic
  • 12 cups Smoked Gouda Cheese (shredded)

Instructions

  1. Preheat oven to 425 degrees.
  2. Slice a loaf of French bread at an angle into 12 slices about ½ inch thick, then set aside.
  3. Cut all the vegetables into about ¼ inch cubes.  Then place them in a bowl and add olive oil and toss until all the vegetables are coated well.
  4. Pour the vegetables into a 10 x 15 baking dish, and sprinkle with a little sea salt.  Roast the vegetables uncovered for about 15 minutes, or until tender (stirring them about halfway through).  Remove from the oven and let cool while preparing the mayonnaise mixture and French bread.
  5. Place the 12 slices of French bread on a baking sheet. In a small bowl, mix together the mayonnaise and minced garlic, and spread a thin layer of the mixture on top of each of the French bread slices.
  6. Turn the oven on to broil.  Then spoon a layer of vegetables on each of the French bread slices, and top each slice with a layer of the shredded smoked gouda cheese.  Put the baking sheet on the top rack of the oven and broil for 3 to 4 minutes, or until cheese is melted and turns golden brown.
  7. Remove from the oven and let them cool a little bit.  Sprinkle with parsley and serve!
