Smoked Gouda Veggie Melt Recipe

Are you looking for a quick and easy meal or something special to make for game day or your next party?

Then you need to make these delicious smoked gouda veggie melts on yummy toasted French bread that will please everyone! If you are a vegetarian, this is a great vegetarian recipe!

Step-by-step Instructions:

Start by preheating the oven to 425 degrees.

Slice a loaf of French bread at an angle into 12 slices about ½ inch thick, then set aside. You can also find pre-sliced French Bread in the store.

Cut all the vegetables into about ¼ inch cubes. You can use any veggies you want, we used, Bell pepper, onion, mushrooms, and broccoli, but you can always add more!  Then place them in a bowl and add olive oil and toss until all the vegetables are coated well.

Pour the vegetables into a 10 x 15 baking dish, and sprinkle with a little sea salt.  Roast the vegetables uncovered for about 15 minutes or until tender (stirring them about halfway through).  Remove from the oven and let cool while preparing the mayonnaise mixture and French bread.

Place the 12 slices of French bread on a baking sheet.

In a small bowl, mix together the mayonnaise and minced garlic, and spread a layer of the mixture on top of each of the French bread slices. If you like mayonnaise, you can make this a little thicker, but if you like the bread a little crisp, keep the layer of mayonnaise a little thinner.

Turn the oven on to broil.  Then spoon a layer of vegetables on each of the French bread slices, and top each slice with a layer of shredded smoked gouda cheese. If you can’t find shredded Gouda Cheese, just buy a package of sliced Gouda cheese and slice it into small strips. Put the baking sheet on the top rack of the oven and broil for 3 to 4 minutes, or until cheese is melted and turns golden brown.

Remove from the oven and let them cool a little bit.  Sprinkle with parsley and serve!
