30 minute Stuffed Pepper Soup

Ingredients

  • 1 1/2 lbs. Lean Ground Beef
  • 1 Tsp. Onion Powder
  • 1 Tsp. Garlic Powder
  • 1 Tsp. Italian Seasoning
  • 1/2 Tsp. Red Pepper Flakes
  • 1 Tbsp. Worcestershire Sauce
  • 1 cup Sweet Onion (diced)
  • 1 cup Green Bell Pepper (chopped)
  • 1 cup Red Bell Pepper (chopped)
  • 1 Can Diced Tomatoes
  • 1 Can Tomato Sauce
  • 2 cups Chicken Broth
  • 2 cups Uncooked Minute Rice
  • 2 cups Water

Toppings:

  • Mozzarella Cheese (shredded)
  • Parmesan Cheese (grated)

Instructions

  1. In small pot bring water to a boil, then stir in the Minute Rice. Remove it from the heat, cover and set aside.
  2. In a Dutch oven or large stock pot, add ground beef, Worcestershire Sauce and season the meat. Once the meat is brown, add the diced onion and green and red bell pepper. Cover and let it cook for about 5 minutes until the veggies are tender.
  3. Then add diced tomatoes, tomato sauce, and chicken broth (if you don’t have chicken broth you can use water with granulated chicken bouillon). Mix it together, then cover and let it simmer for about 15 to 20 minutes, stirring occasionally.
  4. Add the cooked rice into the soup and top with mozzarella and grated parmesan cheese and enjoy this delicious comforting soup!

Notes

Note: If you want to store this soup for leftovers, add the rice to each bowl separately instead of the entire pot, as the rice will tend to absorb the liquid in the soup.
