Scalloped Potatoes Recipe aka Au Gratin Potatoes

When we think of comfort food, it usually includes potatoes, and this is definitely a delish bowl of comfort!

We used organic Yukon Gold potatoes in this recipe. Although, you can use any kind of potato you prefer. Slice about six potatoes thin and set aside. Then in a saucepan on medium heat, add olive oil and butter. Add some sweet onions and saute them until they are soft.

Then add a little more butter to the onions and add some all-purpose flour to make a roux. Cook the flour for a couple of minutes.

Once the flour is cooked, add in the seasoning, whole milk (we prefer whole milk, but you can use skim milk), and shredded cheese blend. We used a blend of shredded yellow cheddar, white cheddar, and Monterey jack cheese.

In a pre-greased deep 8×10 baking dish, place 1/3 of the sliced potatoes in the baking dish and add 1/3 of the cheese sauce and spread it evenly over the potatoes. Repeat this step two more times. Top with the remaining shredded cheese and sprinkle with some paprika.

Cover the dish and place it in the oven at 375 degrees for 65 minutes.

Remove the cover from the baking dish and sprinkle some crispy fried onions on top. Let it bake uncovered for 5 more minutes. You don’t want to leave them in too long as they will turn dark and burn. Let it sit for about 10-15 minutes and serve.
