Dry Ingredients:

1 Cup All-purpose Flour

1 Cup Cornmeal

1 Tbsp. Baking Powder

1 Tsp. Salt

½ Tsp. Pumpkin Pie Spice

½ Cup Brown Sugar

Wet Ingredients:

2 Eggs

1 Cup Pumpkin Purée

1/3 Cup Vegetable Oil

2 Tbsp. Honey

½  Cup Cold Buttermilk

How to make pumpkin cornbread:

Start by preheating the oven to 375 degrees.

 

In a medium mixing bowl, whisk all the dry ingredients together (be sure to smooth out any brown sugar lumps), then set it aside.

In another medium mixing bowl, add all of the wet ingredients and mix them together. Then add the dry ingredients into the wet mixture and fold it in just until it’s combined.

Pre-grease an 8 x 10 baking dish with butter and pour the mixture into the dish, spreading it out evenly.

Bake it uncovered for 30 minutes. It’s done when you insert a toothpick into the center of the bread, and it comes out clean.
