Ingredients

Scale
  • 1 Cup Blueberries

Dry ingredients:

  • 1 1/2 cups all purpose flour
  • 1 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • Wet ingredients:
  • 1/3 cup canola oil
  • 1 egg
  • 2 tsp. vanilla
  • 1 cup milk

Instructions

  1. Preheat oven to 425 degrees
  2. You will need two bowls.
  3. Bowl #1: Add and mix all dry ingredients and whisk together.
  4. Bowl # 2 add in oil. then in a 1 cup measuring cup add, egg, vanilla then fill it up to the remainder of the measuring cup with milk. Mix with oil then pour in the flour mixture.
  5. Gently fold the mixture together then add 1 cup of blueberries. Add a bit more flour if you want your batter thicker! Mix gently and spoon into a muffin pan.
  6. Sprinkle sugar on top off the batter.
  7. Place in the oven and bake for about 20 to 25 minutes. You will know they are done when you can poke a toothpick into the muffins and it comes out clean. Let cool and Enjoy!
