Coca Cola Chicken Thighs Recipe

We are always looking for a one pan meal that is simple and delicious, and this is definitely one of our new favorites. 

We use boneless skinless chicken thighs because they stay super juicy and tender. This recipe would also be good on any cut of chicken you like.  Prepare the chicken by adding some yellow mustard and seasoning and rubbing it into the meat on both sides. The mustard will help keep the seasoning on and tenderize the meat.

This tasty Coca-Cola sauce is easy to make and you only need a few key ingredients to make it. We used 12 ounces of Coca-Cola, but you can use regular Diet Coke or Coke Zero. Then add some ketchup, minced garlic, brown sugar and some Worcestershire sauce. You won’t believe how flavorful and tender your chicken will be in this sauce.

 

Making Sauce for Coca Cola Chicken

Cooking in a cast iron skillet is great for searing or browning meat, and always gives the food such a great taste. 

The next step is to add about a tablespoon of olive oil in the cast iron skillet on medium heat and place the chicken in the skillet to brown. Brown the chicken on both sides. It takes about 5 minutes per side.

Once the chicken is brown on both sides, pour the Coca-Cola mixture over the top of the chicken. Reduce the heat to low and let simmer uncovered for about 30 minutes. Turn the chicken periodically as it simmers.

If you prefer a thicker sauce, you can thicken it by making a slurry using 3-4 teaspoons of cornstarch and 1/3 cup of water. Move the chicken to one side of the pan and pour the slurry into the sauce. Stir the sauce until it thickens, then place the chicken evenly in the pan. Spoon the sauce over the chicken.

Ingredients

Scale
  • 8 Boneless/Skinless Chicken Thighs
  • 4 Tbsp. Yellow Mustard
  • 1 Tsp. Garlic Powder
  • 1 Tsp. Onion Powder
  • 1 Tsp. Paprika
  • 1/2 Tsp. Pepper
  • 1/2 Tsp. Salt
  • 1 12oz. Can of Coca Cola
  • 3/4 Cup Ketchup
  • 1 Tbsp. Garlic (minced)
  • 1 Tbsp. Worcestershire Sauce
  • 2 Tbsp. Brown Sugar
  • 1 Tbsp. Olive Oil

Optional:

  • 34 Tsp. Cornstarch + 1/3 Cup Water

Instructions

  1. Prepare the chicken by adding some yellow mustard and seasoning and rubbing it into the meat on both sides.
  2. In a bowl, mix Coca-Cola, ketchup, minced garlic, Worcestershire sauce, and brown sugar together and set aside.
  3. In a cast-iron skillet on medium heat, add olive oil and sear both sides of the chicken until brown (about 5 minutes per side). Pour the Coca-Cola mixture over the chicken, reduce heat to low, and let simmer uncovered for 30 minutes.
  4. Optional: If you would like a thicker sauce, make a slurry with 1/3 cup water and 3-4 Tsp. of cornstarch. Move the chicken to one side of the pan, pour the slurry into the sauce and stir until the sauce thickens to the consistency you like. Place the chicken evenly in the pan and spoon the sauce over the chicken.
  5. Serve over rice or potatoes. Enjoy!
