What you need to make this recipe:

2 Cups Andouille Sausage (sliced)

1/3 Stick of Butter 

1/2 Cup Green Bell Pepper (diced)

1/2 Cup Red Bell Pepper (diced)

1/2 Cup Sweet Onion (diced) 

1/4 Cup Flour

2  1/2 Cups Whole Milk

1 Tbsp. Cajun Seasoning

1/2 Tsp. Kosher Salt

Splash of Wine (Optional)

2 Cups Crawfish Tails 

1 Cup Shredded Swiss Cheese 

1 Cup Shredded Pepper Jack Cheese 

8 oz. Elbow Macaroni

Garnish with Green Onion and Paprika

Ingredients

  • 2 Cups Andouille Sausage (sliced)
  • 1/3 Stick of Butter
  • 1/2 Cup Green Bell Pepper (diced)
  • 1/2 Cup Red Bell Pepper (diced)
  • 1/2 Cup Sweet Onion (diced)
  • 1/4 Cup Flour
  • 2 1/2 Cups Whole Milk
  • 1 Tbsp. Cajun Seasoning
  • 1/2 Tsp. Kosher Salt Splash of Wine (Optional)
  • 2 Cups Crawfish Tails or Shrimp
  • 1 Cup Shredded Swiss Cheese
  • 1 Cup Shredded Pepper Jack Cheese
  • 8 oz. Elbow Macaroni

Garnish

  • Green Onion
  • Paprika

Instructions

  1. In a skillet on medium heat, brown Andouille sausage then remove from pan and set aside.
  2. Cook elbow macaroni according to package directions and set aside.
  3. In the same skillet, add butter, green and red bell pepper, and sweet onion. Sir and let it simmer for 2 minutes then stir in flour stirring continuously for 2 minutes. Then slowly stir in whole milk continue to stir over medium heat for 5 minutes. Add Cajun seasoning and kosher salt. Add a splash of Wine (Optional) Reduce to a simmer, then stir back in the sausage.
  4. Then stir in crawfish tails, shredded swiss cheese, pepper jack cheese and cooked and drained elbow macaroni. Garnish with green onion and paprika…Enjoy!
